While ice cream is not the first thing that pops into our heads as a dessert option in these long cold months of Autumn and Winter, we nevertheless love our mint chocolate chips.
Well, we just found a great recipe for mint chocolate chip cookies that will blow you away. Since it is the season for baking, what better way to get into the swing of things than a sweet reminder of summer fun? This recipe is so easy anyone will be baking like a champ.

To make these amazing mint chocolate chip cookies, you will need one pouch Betty Crocker sugar cookie mix, a half a cup of softened butter, a quarter to a half teaspoon mint extract, six to eight drops green food coloring, one egg, one cup crème de menthe baking chips, and one cup semi sweet chocolate chunks.

To start, preheat your oven to 350 degrees. In a large bowl, stir cookie mix, butter, mint extract, food coloring and egg until they form a soft dough. Stir in crème de menthe baking chips and chocolate chunks. When you are done, use a teaspoon or small cookie scoop to drop dough about 2 inches apart on an ungreased cookie sheet. Finally, bake 8 to 10 minutes or until set. Let cool for about 3 minutes, then transfer cookies to a wire rack.

Here is another great cookie recipe, and this one only needs three ingredients. All you need to make these sweet and buttery cookies is six ounces of butter, three and a half ounces of superfine sugar, and nine ounces flour. If you have those simple pantry staples, you’re just 30 minutes away from a batch of scrum.

To make these easy cookies start by preheating your oven to 325F. Then, with a paddle attachment, beat together butter and sugar on medium speed until light and fluffy. Then add all of the flour in one go and let it mix until mixture resembles a crumb texture. (You can also do this step by hand. Rub the flour into butter and sugar until crumb-like.) Next, dump cookie mixture onto a clean surface and continue by hand. You will lightly knead and work the crumbs until it forms a dough. Then shape the dough into a long rectangular prism. Sprinkle raw sugar onto wax paper and roll the dough in it. After the dough is coated with sugar, transfer it onto plastic wrap and set it in the fridge or freezer to firm for about 30 minutes. Next, slice the dough into 1cm thick square and place on cookie sheet and then bake for 20 minutes or until golden brown.

You will always have fresh-baked cookies just 10 minutes away, which is both incredibly wonderful and insanely dangerous.
