But now the team at Little Things has uncovered a new, delightful way to use tortillas for breakfast. As you’ll see in the short and simple recipe below, this recipe is like an egg muffin with a Southwestern twist. It’s easy to make and even easier to enjoy. Check it out now!

To create these breakfast tortilla cups, you’ll need:

  • 12 flour tortillas
  • 6 eggs
  • 1 cup of sour cream
  • 1 cup shredded cheese
  • Salt & pepper
  • Bell peppers, diced
  • Onions, diced

Start by cutting 3.5-inch circles from your flour tortillas. Then grease the muffin tin and put the tortillas in each cup.

Crack 6 eggs into a mixing bowl. Pour in your sour cream and mix. Then add ½ cup of shredded cheese and your salt & pepper.

Pour the egg mixture into the tortilla cups. Then top with diced bell peppers and onions.

Bake your tortilla cups in a 350°F for 10-minutes. Then sprinkle the hot breakfast food with the rest of the cheese.
