The ingredients you’ll need to make these cheesy baked eggs include:

  • 3 tablespoons butter
  • 2 large onions, sliced thinly
  • 1/4 cup diced sundried tomatoes
  • 1 cup bread crumbs, homemade or panko
  • 3/4 cup shredded gruyere cheese
  • 3/4 cup grated parmesan cheese
  • 6 or 7 eggs

Start by preheating your oven to 360°F. Now take out your oven-safe skillet (cast iron works perfectly), and melt your butter over medium heat. When it’s melted, add in your sliced onion. Cook until soft and translucent but not browned.

Add in your sundried tomatoes.

In a separate bowl mix your bread crumbs and cheeses. Pour half this mixture over the onions. Create little indents for your eggs. Then crack them and put them on top.

Now sprinkle the last of the breadcrumb mixture onto the eggs. Put your skillet in the oven for 15-20 minutes. Rotate your skillet halfway through to make sure the top browns evenly.

If done correctly, the yolks will still be runny. This cheesy baked eggs recipe will make anyone’s mouth water.
