Is it your turn to bring the side dish to your neighborhood potluck or block party? Instead of making your lame, go-to potato salad or the boring green bean-casserole, you’re going to want to try this super simple cheesy bacon potatoe recipe from Stephanie Manley.
With a few ingredients and with the help of your trusty slow cooker, you’ll have a side dish that many would be proud to eat as the main course.

Before you get cooking gather together the following ingredients:
- 3 large potatoes
- 1/4 pound of bacon, chopped
- 1 cup thinly sliced onion
- 2-3 cloves sliced garlic
- salt and pepper
- 3 tablespoons butter
- 2 cups cheese
- 1 to 2 tablespoons sliced green onions
First line your slow cooker with aluminum foil to prevent sticking. Then slice your potatoes in half and then into quarter-inch pieces. Put a thin layer of potatoes on the bottom.
Now add some garlic and 1/4-inch sliced onion on top of the potatoes plus some salt and pepper. Now put your chopped bacon on top. You can use raw or crisped bacon.
Finish it off with a cup of cheese and add some tablespoons of butter. Now cover the top with foil to help everything cook faster.
Cook on high for 6 hours or on low for 8-10 hours.
When you remove the foil, make sure your potatoes are cooked. Add the final cup of cheese onto the dish and top with sliced green onions.
