When I don’t know whether I want to eat food that’s sweet or savory, I always find myself staring into my fridge until some morsel or another strikes my fancy. I don’t always have the ingredients for this delicious pulled pork recipe, but I have perhaps solved this eternal problem with a new side dish that can be added to any meal. These maple-glazed roasted carrots are the perfect combination of sweet and savory — and are a guilty pleasure without all of the guilt!
Ingredients:
2 lbs. carrots
1/4 cup maple syrup
1/4 cup olive oil
salt
pepper
thyme
Directions:
Peel carrots and slice them diagonally into 1-inch pieces. Then place them on a parchment-lined baking sheet.
Pour olive oil and maple syrup over the carrots, and add the salt and pepper to taste. Finally, add a few sprigs of fresh thyme for a taste that will tie the dish together!
Mix all of the ingredients on the baking sheet, and place in the oven for 25 minutes at 375 °F, or until bubbly.
This recipe is so simple and easy, I’m going to make this dish tonight for my family!
