To create these breakfast tortilla cups, you’ll need:
- 12 flour tortillas
- 6 eggs
- 1 cup of sour cream
- 1 cup shredded cheese
- Salt & pepper
- Bell peppers, diced
- Onions, diced
Start by cutting 3.5-inch circles from your flour tortillas. Then grease the muffin tin and put the tortillas in each cup.
Crack 6 eggs into a mixing bowl. Pour in your sour cream and mix. Then add ½ cup of shredded cheese and your salt & pepper.
Pour the egg mixture into the tortilla cups. Then top with diced bell peppers and onions.
Bake your tortilla cups in a 350°F for 10-minutes. Then sprinkle the hot breakfast food with the rest of the cheese.
